OIL Oils are a vital, natural source of three essential fatty acids your body can only obtain from outside sources. Unfortunately, the common method of extracting oil from its source is through heating (which is how all non-coldpressed oils are processed). The heating destroys those very properties that make oils nutritious, that enable your body to use those fatty acids so critical to its well-being. Once again the lecithin, the key to the oils' digestibility, is destroyed.
HIGH CHOLESTEROL Most foods are only high in cholesterol because of man's meddling. Anything high in cholesterol is originally high in lecithin as well. Foods are laden with unusable, clotty cholesterol only because its litde partner, lecithin, has been destroyed by man's processing. Examples? Butter, milk, and cheese.
